    Cashew Cream
    Raw, Gluten and Dairy Free

    Ingredients

    3 cups Raw Cashew Nuts - soaked in water for 6 hours
    1 orange - squeezed
    1 Lemon - squeezed
    6 dates - soaked for 2 hours
    3 drops Vanilla Essence
    1 pinch Celtic Salt
    ½ cup water

    Blend all ingredients until smooth.

    Raw Carrot Cup Cakes

    Gluten and Dairy free

    Cake Crust ingredients

    2 cups raw Almonds
    2 cups Dates
    1 tsp Cinnamonwatch-video-web
    3 tbsp Coconut Oil
    1 pinch Celtic Salt

    Place all ingredients in a processor and
    blend until the mix looks like bread crumbs. Press into...........

     

    Carrot Cake ingredients
    2 carrots - sliced
    ½ cup Shredded coconut
    6 pitted dates
    ½ tsp grated Ginger
    1 cup Walnuts
    1 tsp Cinnamon
    1/2 tsp Nutmeg
    ½ Lemon - squeezed
    Pinch of Celtic Salt
    Place all ingredients in a processor until the mix turns into a pulp.

    Press the Carrot Cake mix into the paper cups in the cup cake tray and place in the fridge to set for 2 hours.

    Strawberry and Pepper Satays with Cashew Cream
    Raw, Gluten and Dairy Freewatch-video-web

    3 punnets Strawberries
    Pepper
    Ginger
    Dates pitted and soaked
    Bamboo satay sticks

    Place 4-6 Strawberries on a satay stick.
    One punnet of strawberries with the leaves removed from the tops. Place them in blender with ginger, pepper and dates

    You can also serve this in a Parfait Glass by slicing the strawberries and layering with the Cashew Cream.
